Novellum is a custom cuvee of Chardonnay made by an undefined for Eric Solomon of European Cellars. Although Eric was initially drawn to the estate for the red wines, it soon became clear that the Chardonnay and Viognier grown on the property possessed a level of quality that is seldom found in white wine varietals in the Languedoc.
When Eric commissioned this project, he worked with undefined undefinedthe winemaker to fashion a wine that “showed off” the particular terroir and which was also a great value! The Languedoc is a vast area of warm days and nights that helps to produce wine with great body and weight. However, in this particular corner of the region, the vines are somewhat protected from the heat and are able to produce grapes with higher levels of acidity and balance.
The soil is mostly made up of small stones and gravel. The Chardonnay is grown on slight hillsides while the viognier (on whose lies that Chardonnay is vinified), is grown in a lower-lying, protected parcel.
Before fermentation, there is a cold soak for the Chardonnay. After the alcoholic fermentation, the Chardonnay is passed over the lies of the viognier produced at the estate. Some of the viognier is allowed to develop botrytis, so that aromas that are picked up by the Chardonnay are rich and full, usually consisting of peaches, honey, honeysuckle, and pear.
Year after year, the Novellum Chardonnay is applauded for being one of the best Chardonnay values on the United States market. Because the wine is un-oaked, many restaurants have found it to be a terrific “by the glass” Chardonnay which marries quite well with food.
