The Vintage 2003: An exceptionally early harvest end of August due to an outstanding hot summer. Grapes were extremely well mature with high concentration. Very low yields. Grapes had to be cooled down before pressing.
Aging in oak during 12 months.
Tasting: Deep ruby color with purple tinges. Aromas of jammy red berries (strawberry) mixed with chocolate and spicy nuances and enhanced by a hint of vanilla. Well-balanced, generous. Outstanding aromatic combination enhanced by a subtle oak note. Long persistence and lingering aftertaste.
Food Pairing : It is perfectly matched with red meat grilled or en sauce and all cheeses, especially the local cheeses like Epoisses or Citeaux.
