The Castillo Ygay Gran Reserva Especial 2000 is a complex and elegant classic. Only the finest vintages at the 300-hectare Ygay Estate are used to make Castillo Ygay. This Gran Reserva Especial is made from Tempranillo and Mazuelo with less ageing in barrel and bottle before release than the previous vintages. Limited in production and sought after all over the world, it is the worthy choice for our emblematic Castillo Ygay label.
The Castillo Ygay Gran Reserva Especial 2000 is bright tawny red in color, with an open nose of rich spice and fruit balanced by firm, subtle oak. The palate begins with an intense explosion of ripe fruit becoming increasingly serious with hints of mushrooms and nuts, and balanced by very fresh acidity and soft tannins.
Vintage Summary:
Extraordinary balance and the ability to age well are two hallmarks of the 2000 vintage. The high quality can be attributed to a severe frost in April that reduced the total production to just 60 percent of average levels. As a result, the fruit that survived was very concentrated and healthy. Harvesting by hand took place from Oct. 10-12. In general the grapes entered the cellar with an exceptional level of ripeness and sanitary condition, with a significant proportion of the harvest offering ideal characteristics for quality wines — sufficient alcohol content and a high polyphenol content — and for long cask ageing of these wines.
Key Vinification Aspects:
The grapes are first carefully de-stemmed and squeezed and then fermented in temperature-controlled, 30,000-liter stainless steel tanks for 11 to 15 days with daily remontage and pigeage processes to help develop the wine’s personality. Both these processes ensure maximum color and aroma without producing excessive tannin.
Recommended Pairings:
The Castillo Ygay Gran Reserva Especial pairs well with red meats and game, cured ham and strong cheeses. We recommend you decant the wine an hour before serving it at 16 to 18 º C.
